Dairy-Free Choc Raspberry Coconut Bites

I’m in love - and at this point - 90% coconut and chocolate

Prep time 15mins Cooling Time 40mins

Serves Makes around 10 serves (Depending how much mixture you eat from the bowl)

INGREDIENTS

1 can coconut condensed milk

2 cups of shredded coconut

1/4 cup frozen raspberries (crushed)

1 jar of Pana Chocolate Raspberry Coconut & Chocolate Spread

40g dairy free dark chocolate

METHOD

Step 1 Mix the condensed milk, coconut and frozen raspberries in a large bowl

Step 2 Roll into little logs and place onto a tray lined with baking paper and put in the freezer for 15mins.

Step 3 Heat a small amount of water in a pot and put a bowl over the top to create a Bain Marie

Step 4 Add the full jar of chocolate spread and dark chocolate to the bowl and stir until melted

Step 5 Roll the coconut logs in the chocolate and put back on the tray and into the freezer for a further 15mins

Step 6 Chop them up and enjoy! Store them in the fridge or freezer (I prefer freezer)

A little messy, but so worth it
