Vegan Fried Rice with Honey Soy Tofu

This one surprised me, it was a quick one off recipe test that could have gone either way, it went the good way.

It’s quick, light and totally yum.

Prep time 15mins Cooking Time 20mins

Serves 3-4

INGREDIENTS

300g firm tofu

2 tbsps sesame oil

2/3 cup of soy sauce

3 tsps honey

3 garlic cloves

1 tsp crushed ginger

1 cup of basmati rice (uncooked) or you can always use a family size pre-cooked basmati rice pack

1 bunch of spring onion

1 can of sweet corn

2 cups of frozen peas

1 bunch of buk choy

1 tbsp dairy free butter (I used nuttelex)

METHOD

Step 1 Prepare the rice as per packet instructions

Step 2 While the rice is cooking slice the tofu into 1cm thick slices, heat the sesame oil in a pan over high heat and fry the tofu until crispy on both sides, remove from the pan and set aside to cool

Step 3 Chop the buk choy into 1cm thick pieces, using the same pan from the tofu (so you can enjoy some of that sesame oil goodness) fry the buk choy over a medium heat until it just starts to soften, remove from the heat and set aside

Step 4 Steam the peas in the microwave or on the stove top, slice the spring onions and drain the sweet corn

Step 5 Peel, crush and chop the garlic into small pieces

Step 6 In a large bowl combine the soy sauce, honey, ginger and garlic

Step 7 Melt the butter in a large pan and add the rice, coat the rice in the butter

Step 8 Chop the tofu into 1cm pieces, then heat a pan over a low heat and add the tofu to the pan, pour the honey soy sauce mix over the top of the tofu and allow to heat gently for a few mins

Step 9 Add the buk choy, peas, corn and spring onion to the rice mixture and remove from heat

Step 10 Serve the fried rice in a deep bowl an top with the tofu and sauce, enjoy!
