Vegan Minestrone Soup

There’s something about a warming Minestrone Soup that soothes the soul, this plant-based soup is everything a good soup recipe should be, easy, affordable, healthy and hearty, I hope it makes you feel good!

Prep time 15mins Cooking Time 1hour

Serves 4

INGREDIENTS

4 small potatoes

1 brown onion

3 cloves of garlic

3 tsps of sweet paprika

3 tsps of mixed herbs

Olive oil

4 sticks of celery

2 large carrots

1/2 a lemon

1 400g of diced tomatoes

1 cup of small pasta shells

1 bunch of parsley

1 400g of white beans

1 zucchini

1 cup of peas

2 litres of vege stock

Salt & pepper

METHOD

Step 1 Peel and dice the onion, garlic, carrot and potatoes, then dice the zucchini and celery

Step 2 Heat 2 tbsps of olive oil over a medium heat and add the onion and garlic, cook until the onion is soft

Step 3 Add the mixed herbs and stir through, then add the paprika and continue to stIr through for a few mins

Step 4 Add the potatoes, carrots, celery and zucchini, season to taste with salt and pepper and stir though for about 5 mins, then add the tomatoes and warm through

Step 5 Add the vege stock, salt and pepper and bring to a boil, once boiling lower the heat to a slow simmer and cook for 20mins

Step 6 Add the pasta, white beans, peas and lemon then cook for a further 25mins

Step 7 Add more salt and pepper to taste if required, chop parsley, add parsley to the soup and stir through

Step 8 Serve and enjoy!
