Broccolini and Leek Slow-Cooked Vegan Soup

Sometimes you just need a good bowl of veggies to taste a little bit naughty

Prep time 15mins Cooking Time 8 hrs

Serves Makes 8 serves

INGREDIENTS

2 bunches of broccolini

1 leek

1 head of cauliflower

1 brown onion

4 stalks of celery

3 medium white potatoes

2 tsps dried thyme

2 tsps cumin

2 tbsps dairy free butter

1.25 litres of veggie stock

Salt & pepper to taste

Dairy free cheese to serve

METHOD

Step 1 Peel, chop and add everything to the slow cooker, cook on high for 4 hours then leave on low for a couple more.

Step 2 Turn it off half an hour before serving and blitz it with a hand held blender (not too smooth - chunks are good!)

Step 3 Grate a little dairy free cheese into the soup and stir, season with salt & pepper and enjoy 😊
