The dairy-free “Everything Green” Charred Salad

The “everything green” salad - my favourite thing when I don’t know what to cook.

Prep time 20mins

Serves Makes 3 big serves

INGREDIENTS ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Parsley

Coriander

2 Avocados

A large handful of Cranberries

Half a cup of crushed Almonds

Small handful of Pumpkin & Sunflower seeds

1 large Zucchini

1 bunch of Broccolini

Half a red onion

2 stalks of celery

Mixed herbs

The juice of half a lemon

Olive oil

Salt & Pepper

Soyoyoy UnFeta’d (which is excellent) OR any plant-based feta cheese

METHOD

Slice the zucchini longways and pan fry with mixed herbs until charred on both sides, remove to cool

Pan fry the broccolini until charred too and remove to cool

Chop parsley, coriander, avocado, red onion and celery into small pieces and add to a large mixing bowl

Add cranberries, almonds, seeds, and two big scoops of the UnFeta’d cheese to the bowl

Drizzle with olive oil, lemon, salt & pepper and mix through

Top with a little more of the UnFeta’d and serve! Awesome side dish but better as a stand-alone dinner
