Chewy Vegan Muesli Bars

I thought these would be tasty, but I knocked my own socks off with this one. I could legit eat these all day long. I hope you love them as much as I do.

Prep time 20mins Fridge time 2 hours

Serves Makes about 12 bars depending on the size you cut

INGREDIENTS

1 3/4 cup of quick oats

3/4 cup of coconut flakes

1 cup of cashews (unsalted)

1/2 cup of peanut butter

1/2 cup of honey (or brown rice syrup if vegan)

1 tbs chia seeds

3/4 cup of cranberries

2 tsps coconut oil

1/4 tsp of salt

1/2 tsp cinnamon

1 tsp vanilla extract

METHOD

Step 1 Line a square pan with baking paper

Step 2 Combine oats, coconot, chia seeds, cashews and cranberries in a food processor and blitz for a few seconds (just to break up the cashews and coconut a little), transfer to a large bowl

Step 3 Put a medium saucepan over a medium heat and add in honey, coconut oil, salt, cinnamon, vanilla and peanut butter, stir until the mixture is melted (don’t over heat!)

Step 4 Add the wet ingredients to the dry ingredient bowl and mix well

Step 5 Transfer the mixture to the prepared pan and pack it down firmly, really press it in to ensure it all sticks together well, refrigerate for 1-2 hours

Step 6 Cut into bars, they’ll stay delicious for a couple of weeks (if they last that long)
