Vegan Coconut Banana and Strawberry Oats

Prep time 2mins Cooking Time 10mins

Serves 2

INGREDIENTS

1 cup of quick oats

1 banana chopped

1/3 cup of coconut

1 tsp of cinnamon

2 tbsps of agave syrup

1/4 cup of LSA

1 cup of coconut milk

1/4 cup of oat milk

Coconut yogurt to serve (I used Tasmania’s Westhaven apricot coconut yoghurt)

5-6 strawberries to serve

METHOD

Step 1 Add oats and 1/2 cup of water to a pot and stir through over a medium heat

Step 2 Add the LSA, cinnamon and most of the coconut (saving some for the top), stir through

Step 3 As the water soaks in start to gradually add your coconut milk, stirring through as you go

Step 4 Add the banana and stir, allow it time to warm through

Step 5 Add the agave syrup, and if the oats are too thick keep adding a little more coconut milk until you’re happy with the consistency

Step 6 Once ready remove from the heat and stir through the oat milk

Step 7 Serve and top with yoghurt, strawberries and the remaining coconut
