Mum’s Plant-Based Fruit Cake

A special guest recipe made by a very special lady - my mum - love ya mum

Perfect for Christmas lunch or just ‘cause

Prep time 10mins Cooking Time 90mins (plus overnight soaking)

Serves 12

INGREDIENTS

1 kilo of mixed fruit

600ml oat milk

2 teaspoons instant coffee

2 cups self-raising flour

Dairy free butter for greasing the pan

METHOD

Step 1 Mix the coffee with a small amount of water to make a slurry

Step 2 Add coffee mixture to milk

Step 3 Soak the mixed fruit in the coffee milk in the fridge overnight

Step 4 Pour yourself a gin and relax

Step 5 The next day… heat the oven to 160 degrees (fan forced)

Step 6 Line a springform round pan with baking paper and grease the sides

Step 7 Add flour to the fruit mix and stir through

Step 8 Pour mixture into the pan and bake for 90mins, cake is cooked when a skewer into the middle comes out clean

Step 9 Allow cake to cool in the pan for ten mins and serve with dairy free custard or sliced with dairy free spread
