Dairy-Free French Onion Soup
This recipe takes you to the streets of Paris, where after long days wandering over the cobblestones you find a seat for one, under the red awning of a café. You stumble through your French and order this wonderful classic.
Now you can create that moment at home, and dairy-free, it’s so good you’ll have to share the moment with family though.

Serves 4-6
INGREDIENTS
4 tbsps dairy free butter
2 tbsps olive oil
6 large brown onions halved and thinly sliced
1 tbs minced garlic (or 4 cloves finely chopped)
1/4 cup plain flour
1/2 cup dry white wine
2 sprigs fresh thyme chopped
6 cups veggie or beef style stock
1 teaspoon stock powder
2 whole bay leaves
Salt and pepper
6 slices of thick cut bread
4-6 slices of Dairy Free Down Under Mozzarella Style Slices
METHOD
Step 1 In a large pot over medium heat, heat the olive oil and melt the dairy free butter
Step 2 Add the sliced onions and stir to evenly coat with oil and butter mix
Step 3 Cover and cook for 20 minutes, stirring every five mins, until the onions have softened up
Step 4 Increase the heat to medium-high and add 1/2 teaspoon of salt
Step 5 Stir and continue cooking for 15mins until the onions are golden browned and soft (the bottom of the pan will brown during the process, this is where all of the yummy flavour is! Be mindful that it stays brown and not black / burnt)
Step 6 Stir in the garlic and cook for 1min
Step 7 Add flour and cook for 4 mins to brown slightly
Step 8 Add the wine to deglaze the pan and scrape up the browned bits from the bottom
Step 9 Add the thyme and simmer wine for 2 minutes until reduced by half, you know what to do with the rest of the wine…. 😊
Step 10 Add your stock liquid, stock powder and bay leaves and bring to a boil
Step 11 Reduce heat to simmer and leave partially covered for 30-40 mins
Step 12 While the soup is simmering, top your bread with lashings of dairy free butter and your Dairy Free Down Under Mozzarella slices and toast the cheesy bread under the grill
Step 13 Taste the soup and add salt and pepper as needed, ladle into bowls and top with 1 or 2 of cheesy toast and enjoy
