Vegan White Choc and Macadamia Cookies

Create these cookies when you’re feeling nostalgic for Subway cookies - but want them plant-based - best of both worlds :)

Makes approx. 12 cookies

INGREDIENTS

2 & 1/4 cups plain flour

1 tsp baking soda

1 tsp salt

1 tsp cornflour

3/4 cup plant-based butter, softened

3/4 cup packed brown sugar

1/2 cup granulated sugar

1/4 cup oat milk

2 tsp pure vanilla extract

1 cup @panachocolate white chocolate pieces

1 cup chopped macadamia nuts

METHOD

Step 1 Preheat the oven to 175 degrees and line a couple of trays with baking paper

Step 2 In a medium bowl whisk the flour, baking soda, salt, and cornflour & set aside

Step 3 In a large bowl add the butter, brown sugar, and sugar, mix with a hand mixer until light and fluffy

Step 4 Add the milk and vanilla and beat again until smooth-ish

Step 5 Add half of the flour mixture to the wet mixture and mix until just combined, add the remaining flour mixture and mix until just combined

Step 6 Fold in the white chocolate pieces and macadamia nuts

Step 7 Scoop out tablespoon-sized balls of dough and place on the baking sheets, leaving about 2" in between

Step 8 Bake for 9-11 minutes until just golden, let them cool then enjoy!
